Easy Rhubarb & Strawberry Parfait Recipe

I have to admit, I might have a slight rhubarb and strawberry obsession (which is evident in my last Strawberry Rhubarb Crumble recipe). Can you blame me though? Summer strawberries in Ontario are insanely good and I have no shortage of rhubarb in my garden, so this classic combo ends up being my go-to for summer desserts. From experience though, I know rhubarb can be a bit of a hassle; it’s naturally lip-puckeringly bitter and needs a bit of prep to get the taste balance just right...plus, let’s be real, you might not want to do a lot of complex baking during the hot summer months (I typically don’t).
Cue my Easy Rhubarb & Strawberry Parfait Recipe which uses the most incredible rhubarb vanilla jam from Manning Canning. All you need to do is open the jar and layer on the delicious rhubarb flavour. No gardening skills needed.
Imagine buttery, golden-brown buttermilk biscuits layered with the juicy sweetness of strawberries and the unique tang of rhubarb vanilla jam, creating a symphony of flavours in every spoonful. To top it off, a generous swirl of whipped cream adds the ultimate touch of decadence. Seriously, how good does that sound?
Best part is, this super simple treat is not only a feast for the taste buds but also a breeze to prepare. Whether you're hosting a summer gathering or simply craving a refreshing dessert, this parfait really does taste as good as it looks.
INGREDIENTS
(makes 2 parfaits)
- 4 Lazy Daisy’s Classic Buttermilk Biscuits
- 1 egg, beaten
- Fresh strawberries, sliced (as many as you like)
- Rhubarb vanilla jam from Manning Canning (though any jam will do)
- Homemade Whipped cream
STEPS
- Brush each biscuit with egg and bake in a 350 oven for 30 minutes or 20 minutes in the air fryer on the french-fry setting.
- Once the biscuits are ready, let them cool slightly then break into rough chunks.
- Assemble the parfait by layering biscuits, strawberries, rhubarb jam and whipped cream into a glass (repeat twice)
- Top with an additional dollop of jam, a slice of strawberry and a bit of biscuit crumble.
- Serve immediately or chill if you prefer it cold, and if you have the patience to wait 🙂
