The hunger level of a kid who’s just come home after school is on par with a T-Rex whose been trapped in a field of kale all day. A warm, gooey, cheesy pizza pocket is guaranteed to satisfy even the hungriest and pickiest of children (or dinosaur).  Most pizza pockets on the market though are typically filled with preservatives and are not the most nutritionally sound choice. They are quick and easy, I’ll give them that, but when it comes to taste…meh.

I’ve said it before and I’ll say it again, “Everything is better with a biscuit!” Thank me later, but I have a much healthier and tastier recipe for pizza pockets that are:

a) Easy
b) Delicious
c) Freezable for after school feeds! 

What if I also told you that you can easily make different types of pockets, not just pizza!? Exciting, right? This is all thanks to the magic of Lazy Daisy’s Bake-at-Home Buttermilk Biscuits, which are made by hand, with high quality ingredients and loads of love. Before we dive into the pizza pocket 2.0 recipe, let me tell you why Lazy Daisy’s Roasted Garlic and Asiago Biscuits are a game-changer and a must for this recipe. These biscuits are not your average ready-to-bake dough my friends; they are infused with the rich, savory flavors of fresh roasted garlic and the creamy, tangy notes of Asiago cheese. All natural with no additives or preservatives. The combination is heavenly and provides a perfect base for our pizza pockets

INGREDIENTS YOU'LL NEED

 

  • Lazy Daisy’s Roasted Garlic and Asiago Biscuits (1 pack)
  • Tomato sauce (store-bought or homemade)
  • Cheese cubes (mozzarella, cheddar, or your favorite melting cheese)
  • Egg wash (optional)
  • Melted butter
  • Minced garlic
  • Have other favourite pizza ingredients? Feel free to chop some up and throw them in (peppers, pepperoni or salami, olives, cooked mushrooms etc.).

 


    STEP-BY-STEP INSTRUCTIONS

    1. 1. Let the Biscuits Defrost:
      You want them to be pliable enough to roll out but still firm enough to handle. This usually takes about 20-30 minutes at room temperature.

      2. Roll Them Out:
      Once defrosted, lightly flour your work surface and rolling pin. Roll each biscuit out into a flat circle, about 1/4 inch thick. This will be the canvas for your delicious fillings.

      3. Add Tomato Sauce and Cheese:
      Spoon a small amount of tomato sauce onto the center of each rolled-out biscuit. Be careful not to overdo it; you don’t want the sauce to ooze out during baking. Place 1-2 cubes of cheese on top of the sauce. You can use mozzarella for that classic pizza flavor or mix it up with some cheddar or even pepper jack for a bit of a kick. If you’re adding any other ingredients, make sure you don’t overfill the pockets, but feel free to add them in at this stage.

      4. Roll into a Ball:
      Carefully gather the edges of the biscuit and pinch them together to enclose the filling, forming a ball. Make sure the seams are well-sealed to prevent any leaks. You can brush the tops with an egg wash at this stage if you’d like a glossy finish.

      5. Bake According to Package Instructions:
      Place the pizza pockets seam side down on a baking sheet lined with parchment paper. Bake them according to the biscuit package instructions, usually around 30 minutes at 350°F or for 20 minutes in an air fryer on the french fry setting.

      6. Garlic Butter Finish:
      When there are about 8 minutes left on the timer, pull out the baking sheet and brush the tops of the pizza pockets with melted butter mixed with minced garlic. This extra step adds another layer of flavor and makes the biscuits even more delectable. It is an optional step and one you can omit if you’re after that classic pizza pocket flavour, but I do recommend you give it a try at least once. You will not be disappointed.

      7. Serve Warm and Enjoy!
      Once fully baked, let the pizza pockets cool for a few minutes before serving. They are best enjoyed warm when the cheese is still gooey and melty.

     

    Tips and Variations


    • Different fillings: Feel free to get creative with your fillings and the different biscuit options! How about smoked turkey and cheese in a Jalapeño & 3 Cheese Biscuit? Or maybe PB&J in a Blueberry Maple Biscuit, or some brea and fig jam in the Rosemary & Cheddar Biscuit - yum!
    • Dipping Sauces: Serve with a side of marinara sauce, ranch dressing, or even a spicy sriracha mayo for some extra dipping fun.
    • Freeze for later: Once your pockets are baked and fully cooled, pop them in a ziplock bag and freeze them for later. I recommend you lay them all out on a single layer (have the bag flat) so they don’t stick to one another. All you have to do is throw them in the oven or air fryer for 20-30 minutes on 350, and they’ll be ready to eat! Good as fresh and way better than the pre-frozen pizza pockets of our past.
