Summer is the perfect season for enjoying delicious desserts that are both refreshing and easy to make (because who really want to spend hours in the kitchen baking up complicated desserts on a hot summer day?!). But, it is also the season of BBQs and picnics, so if you're looking for some sweet treats to impress your friends and family, look no further than these 5 simple summer dessert ideas using Lazy Daisy’s Bake-at-Home Buttermilk Biscuits as well fresh seasonal fruits - though frozen fruits will do just fine in a pinch!

1. BERRY SHORTCAKE CUPS:

Start by baking Famous Classic buttermilk biscuits according to the package instructions (only 30 minutes in a 350 oven and they’re done, or 20 minutes in the air fryer on the French fry setting). Once they have cooled, crumble them into small pieces. In a cup or bowl, layer the biscuit crumbles with fresh mixed berries and a dollop of whipped cream. Repeat the layers until you reach the top of the cup. Garnish with a mint leaf for a pop of color and enjoy!

2. PEACH COBBLER PARFAIT:

Slice fresh peaches and toss them with a bit of sugar and lemon juice. In a separate bowl, mix crumbled buttermilk biscuits with a touch of cinnamon or try our Apple Cinnamon biscuits for an added burst of flavour. In a glass or jar, layer the peaches with the biscuit mixture and a spoonful of vanilla yogurt or ice cream. Repeat the layers until you reach the top, and finish off with a sprinkle of granola for added crunch.

3. BUTTERMILK BISCUIT STRAWBERRY SHORTCAKE:

For a classic summer dessert with a twist, try making a buttermilk biscuit strawberry shortcake. Slice cooled biscuits in half and layer them with sliced strawberries that have been macerated in sugar. Top with freshly whipped cream and a drizzle of balsamic glaze for a sophisticated flavor profile that will impress your guests. No balsamic glaze on hand? A dusting of powdered sugar will do just fine!

4. LEMON BLUEBERRY BUTTERMILK BISCUIT TART:

Thaw a package of our ever-so-popular blueberry biscuits and roll them out then press it into a tart pan, or individual mini tart pans (also works in a large muffin tin). Bake until golden brown and let it cool completely. In a bowl, mix together fresh blueberries with lemon zest and a bit of sugar. Spread the blueberry mixture over the biscuit crust and chill in the refrigerator until set. Serve with a dollop of whipped cream for a delicious summer tart.

5. BUTTERMILK BISCUIT ICE CREAM SANDWICHES:

Bake buttermilk biscuits and let them cool completely. Once cooled, slice them in half horizontally and sandwich a scoop of your favorite ice cream between the biscuit halves. Roll the edges in sprinkles, mini chocolate chips, or crushed nuts for a fun and customizable dessert that will be a hit at any summer gathering. The kids REALLY love this one! If you add a little hazelnut, chocolate or caramel spread on there with the ice cream, I am not mad at that one bit.
